We cultivate barley and something new for this very special vintage. This pearl of the cellar is a very special vintage, to offer you an alternative taste universe to the one we have been spreading for 15 years. This whisky is a Single Estate. The cereal grown therefore comes from the historic lands of the Domaine, the Vulson plot. It is on these lands cultivated according to the principles of organic, regenerative and non-tillage agriculture that the Hautes Glaces farm was established 15 years ago. Agricultural methods to guarantee fertile and living soil, for the benefit of the taste of our whisky. In terms of aging, if the cask in question officially contained cognac, the aromatic notes of our whisky lead us to believe that another beverage unofficially participated in the development of our XO. Did a fortified wine settle for some time in this old red? A largely forgivable suspicion given the pleasure felt when tasting it. In indeed its very British side will certainly surprise those who know our Estate well. Mysterious, astonishing and atypical this XO will amaze your senses and revive your taste buds.

Very generous, expressive without detours. We immediately anticipate the richness and the sweet taste to come.

Dried fruits and ripe raisins swollen with sun elegantly support the sweetness of our malted barley. The very slight bitterness gives a nice boost to a whole marked by vanilla aromas and a present and serious woodiness. But which side of the Channel are we on?
